Exploring water-material interaction phenomena combines the richnessof a complex liquid and its solutions as well as their effects on semi-solids. I will report new fundamental experiments to clarify hydrophobicity and the mechanics of self-assembly and denaturation of macromolecules at underwater surfaces. Next I will describe our application of this understanding to create nanostructred photonic materials for biosensors and green aquaculture.
